I made an epic omelette on Saturday, and went to Sydney on Sunday, and ate at my favourite restaurant, New Star Kebab in Auburn.

Oh any my omelette. The trick is to use plenty of milk, and to whip very well so that you get enough air in it to make it nice and fluffy:
